Tree house museum


Tree House Museum 

Abby and I went to the Museum with my sister Crystal and my niece Alyeska.. We had a lot of fun especially because Crystal got us in for free, so that was a big plus. The Tree house museum is a great place to learn and experience new things and Abby had fun learning, so I'm glad my sister invited us. Thanks Crystal!!!! I think the girls had a blast!! :)

Embry Family Reunion



Family Reunion in Oakley Utah
I am so grateful for an amazing extended family they have been fun to get to know and are loving, kind, uplifting, talented people. I love them so much!! I always enjoy visiting them. The Family Reunion was a blast!! Abby had so much fun playing in the playground and I enjoyed the food, talking and meeting new family members to craft/projects my cousin in law has been doing. I love seeing projects that people do it motivates me to think of something to do and imagine a bigger picture. :) 


















Green and red enchilada sauce


 Green or Red Enchilada Sauce



Green Enchilada Sauce (Kate's Knockoff Cafe Rio Recipe)  
Recipe by our best bites

2-3 Tbsp. extra-virgin olive oil
1 Large onion, minced 
5-6 cloves garlic, minced or pressed
2 green peppers, chopped
1-2 jalapenos, seeded and membranes removed if desired ( and I desire always) 
1 1/2 lb. Tomatillos, husked and or halved
1/2 bunch cilantro, coarsely chopped
1 1/2 tsp. Kosher salt 
1/4 tsp. Black Pepper
1 1/2 tsp. Cumin 
4 c. Chicken broth
2-3 Tbsp. sugar (optional and to taste; the sauce Cafe Rio uses seems to be slightly sweet, so if I'm using this sauce for enchilada-style burritos, I generally add a little sugar, but everything else I'd leave it out.) 

         In a Large saucepan or stock pot, heat olive oil over medium heat. 
     Saute onions and garlic until tender and fragrant. 

While Onions are sauteing, combine tomatillos, green peppers, jalapeno peppers and cilantro in your blender. Process until smooth; you may have to do it in batches and/or add some chicken broth to make things bendable.  

Pour the tomatillo mixture over the onions and garlic and add chicken broth, salt, pepper, and cumin. Simmer 15 minutes-1 hour, depending on the consistency you want. I usually turn the heat to high and boil it uncovered until I reach the consistency I want; it makes things go a lot faster. The sauce can also be simmered in a slow cooker all day. 

Serve over tacos, as an enchilada sauce, inside burritos, or as a dip for chips.

For (Chelsea's red enchilada sauce) I just replace tamatillo to tomatoes, Green jalapenos to red jalapenos, and green peppers to red peppers all the rest is the same... I did add chili powder as well if you would like. 




And there you go... Sauce is complete!! 

Shot combo reaction

Crazy month for Abby

My daughter for some reason got a weird rare allergic reaction to the chicken pox and measles combo shot. And then for some reason she has weird reactions to other things, Such as: mosquito bites or spider bites. It makes me wonder if it has some kind of relation to the shot.   




My poor little girl...
 The upside to it is she hasn't had a huge problem with any reaction for months now, so either she's just not getting bit; or this swelling on her face wasn't a bug bit like her doctor said it was in the first place. Instead it was involved with the immunization shot allergic reaction, or the shot is causing her to have an allergic reaction to bites. Either way its not good.
 hopefully she doesn't get the Measles or the chicken pox at least... 

Canning peaches


I am so grateful my mother in law Maxine taught me how to can peaches this summer. it was nice to be taught how to do something to preserve what you have in the summer that can be saved for the winter.
now it makes me more excited to get fruit trees for our house in the mean time both sides of the family have some that I can pick from.. Peaches, apples, cherries, and apricots whatever falls to the gowned my goats will eat or becomes compost. Its nice to know that we try not to waste as much as we can. :)  



Cutting and pealing the peaches is the hardest and most time consuming. 



I would like to say Abby she was helping, but really she just enjoyed eating the yummy cut up peaches. :) 


We put 1/4 cup of sugar some people put less some people put more also you want to put boiling water in afterwards and then we need to wipe off the bottles before putting the lids to get ready for the next step.


This is the step where the canning pot seals the cans with the specific temperature and pressure build up that is needed for the can sealing process. 




And now its time to wait 24 hours for the cans to seal completely!!! Yeah!! Hard labor done!!!

We as a family love dogs!!  I've been thinking of putting together a dog sitting organization or something for two reasons I'm a stay at home mom and we have the land. I mean why not right? ha ha also, I think it'll be fun as long as the dogs are nice... :) All of these dogs are really nice and have different personalities which makes dog sitting even more enjoyable. I actually have dog sat my neighbors dog, but I didn't have a picture he is a cutie as well he gets way excited and jumps up and down when I have dog treats for him. :)
